Makes 6 servings

The recipe calls for champagne or wine vinegar rice. FromI had I substituted red wine vinegar with good results. I also used honey instead of sugar.

1 cup brown rice
2 teaspoons kosher salt, divided
1 / 4 cup champagne vinegar or rice wine
2 teaspoons sugar
1 tablespoon extra virgin olive oil
Freshly ground black pepper
1 pound ripe tomatoes, chopped
1 cup chopped basil leaves

Bring 2 1 / 4 cups water to a boil and add rice and 1 teaspoon of salt. Return to boil, cover and simmer for 30 to 40minutes or until rice is tender and all water is absorbed. In addition, prepare the rice in the rice cooking according to the manufacturer's instructions. Transfer rice to large bowl.
